Happy two-year anniversary!
September 30, 2008
Charlotte, NC

We went back to the Melting Pot for another amazing dinner. Erik even requested the same booth we sat in last year! We started with Sam Adams beer cheese fondue with bread, veggies and granny smith apples. We then had salads, and then the main course. We did a oil fondue that had two batters. We ate filot mignon, teriyaki steak, chicken, shrimp, and mahi mahi. We also had veggies, and our favorite was making the stuffed mushrooms! Because we had our first anniversary there, we're on the mailing list for coupons ... so we got our chocolate fondue for free (pictured above). We like dipping bananas the best.

Earlier in the day, we went to the Daniel Stowe Botanical Gardens to see the Orchid Conservatory and the butterflies. SO NEAT! They have a huge rock wall of so many kinds and colors of orchids. My new obsession is orchids! They had just released butterflies that day, and they were so accessible. In the gift shop, they had butterfly photographs for up to $500! Here's what I got ... even if I'm not a professional. :) (Brian Regan on Butterflies, Funny Stuff!)

We ran out of time on Tuesday, so today we finished by giving each other our COTTON gifts. We also did something cRaZy, and ate a piece of our two-year old cake! It didn't taste awful, but Erik still only ate one bite. He believes food doesn't last much longer than like twelve days. Or three.

We then decided the wedding cake was taking up too much space in the freezer, so we composted it. We know we'll see it again ... Mother Nature has a way of bringing our compost full circle. Check out the video below! (Erik did a really good job for his first iMovie, dontcha think?!)
